METHOD OF PRODUCING XANTHOPHYLL

It is intended to provide a method of producing xanthophyll from a photosynthetic microalga which comprises the step of inoculating a xanthophyll-containing photosynthetic microalga (preferably a cystic microalga) into an enriched medium and proliferating the same, and the step of making the thus proliferated microalga cystic. To this method, a one-stage culture process wherein the proliferation step and the encystment step are continuously carried out with the use of an enriched medium having a low nitrogen source concentration, or the two-stage culture process wherein the microalga is proliferated in an enriched medium having a high nitrogen source concentration and then transplanted into an encystment medium is applicable.
