<P>PROBLEM TO BE SOLVED: To provide a method for producing a lightly salted salmon pickled in malt having a little salinity and simplicity suitable for preference of a person of modern times, and to provide a product depending on the method. <P>SOLUTION: This method for producing the lightly salted salmon pickled in malt comprises removing gill and guts from salmon, putting a taste base material mixed with about 1 kg salt and about 0.5 kg malted rice, aiming at three washed salmons on the bottom of a container from which water can flow, laying the salmons on the container, thoroughly sprinkling the taste base material, putting an about 10 kg weight stone on one salmon and while dehydrating, and dipping the salmon in atmosphere where a daytime temperature is about 15°C and a nighttime temperature does not exceed about 10°C. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
