PURPOSE: A method of making boiled fish paste using boiled rice by extracting salt soluble protein from a fillet of fish and then mixing with boiled rice is provided. The product is rich in nutrients, suits a consumer's taste and is useful as an instant food substitute. CONSTITUTION: The boiled fish paste with boiled rice is prepared by the following process consisting of: adding 1 to 2% by weight of salt into 70 to 80% by weight of a fillet of fish three times while introducing ice thereinto; extracting salt soluble protein from the fillet of fish and then seasoning with sugar and seasoning material; adding 5 to 15% by weight of rice flour and 2 to 5% by weight of rice extract thereto to give gruel; adding 10 to 20% by weight of boiled rice thereto to give mixed gruel; and forming the mixed gruel into a predetermined shape and then heating, followed by cooling. |
