Essence A method comprises washing white or red grape, sorting, separating fruits from bunch, placing fruits into a container, adding preservative and closing; after separation of fruits from bunch, an aqueous-spirit solution is poured onto the fruits, held and fruits are separated from the aqueous-spirit solution; after placing into the container the aqueous-spirit solution is added as a preservative. 3.
