<P>PROBLEM TO BE SOLVED: To provide a method for producing enriched rice comprising adding a small amount of (1) water and a enriching substance, or (2) an enriching substance aqueous solution or enriching substance-containing liquid to the rice little by little while rotating and/or stirring the rice heated to have a temperature of 50-100°C, and making the enriching substance adhere to the rice, making the rice adsorb the substance, or coating the rice with the substance. <P>SOLUTION: This method for producing the enriched rice makes it possible to obtain the enriched rice having a pregelatinization degree of ≤50 % of rice starch and water content of ≤16 wt.%. Various kinds of enriching substances including powder can firmly adhere to the enriched rice so as to cause no breakage or crumble to rice grains and inhibit microorganisms from increasing. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
