PURPOSE: A method of preparing egg powder by separating the contents of an egg from the eggshell, quickly cooling to -70deg.C or less and then drying egg powder to a par-boiling state is provided. It enhances the distribution period and is free from fear of destruction or loss of nutrients during the distribution or storage. CONSTITUTION: The egg powder is prepared by the steps of: washing an egg with water to remove impurities; removing moisture present on the surface of the eggshell; separating the contents of the egg from the eggshell; quickly cooling the separated egg to -70deg.C or less; grinding the cooled egg; and then drying egg powder in a drier of about 70deg.C to a par-boiling state. In the final process, purified salt can be added. The contents of the egg contain egg yolk and egg white. |
