The present invention relates to a preparation method for a Gimbap (rice laver rolls) stuffing using sea eels, and more specifically, a preparation method that removes the characteristic fishy odor of sea eels and processes the sea eels into a Gimbap stuffing form, which is easy to be consumed. According to the present invention, the preparation method comprises the following: a preparation step for cleaning sea eels and removing the guts; a roasting step for roasting the sea eels in the preparation step; a steaming step for spraying steam on the sea eels in the roasting step; a dehydration step for removing moisture from the surface of the sea eels in the steaming step; a grinding step for grinding the sea eels in the dehydration step by using a grinder, to produce sea eel powder; a mixing step for adding a functional additive to the sea eel powder, to produce a sea eel mixture; a heating step for heating the sea eel mixture; an extrusion step for extruding the sea eel mixture in the heating step into a uniform thickness and shape by using an extruder, to produce a molded sea eel material; a cutting step for cutting the molded sea eel material to prepare a sea eel Gimbap stuffing; and a packaging step for processing and packaging the sea eel Gimbap stuffing. |
