<P>PROBLEM TO BE SOLVED: To provide a method for producing a tangle-rolled product capable of keeping its shape even during its heat cooking through fixing its shape even without fixation with a stringy material such as dried gourd shavings or honewort. <P>SOLUTION: The method for producing the tangle-rolled product involves coating tangle with a mixture of starch and protein formulated in a specific balance either directly or in the form of an aqueous dispersion in a tangle-rolling step and making the tangle adhere under a steaming step to fix the shape of the final tangle-rolled product. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
