QUERCETIN COMPOSITION, FOOD PRESERVATIVE, AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide a quercetin composition that can practically be used as a food preservative, a food preservative comprising this quercetin composition and to provide a method for simply producing the quercetin derivative and the food preservative. SOLUTION: This quercetin composition contains quercetin, quercetin glycoside and protocatechuic acid at a molar ratio of 1.5-2.5/1/1.5-2.5. This quercetin composition is produced through the process including following two steps: the first step in which onion peels are extracted with a mixture of water and a lower alcohol and the second step in which the extract is collected so that it may contain quercetin, quercetin glycoside and protocatechuic acid at a molar ratio described above.
