PROBLEM TO BE SOLVED: To preserve perishable foods in a fresh state over a long period. SOLUTION: The method for preserving perishable foods comprises carrying out a rapid cooling step for cooling perishable foods to a non-freezing temperature set to 10 to -1.9°C and carrying out a step cooling to a cryoscopic temperature in which these perishable foods are cooled to≤0°C long-term storage temperature not causing freezing while keeping a set temperature of a refrigerator 2 for cooling these perishable foods in a temperature gradient of≤0.015°C/hr to preserve the perishable foods. As a result, these perishable foods can be preserved in a fresh state over an extremely long period at an ideal low temperature without freezing the perishable foods by carrying out rapid cooling step of these perishable foods and then specifying the set temperature of a refrigerator to an extremely limited range in the step cooling to the cryoscopic temperature.
