<P>PROBLEM TO BE SOLVED: To provide a heat treatment apparatus for food stuffs and its method for reducing unevenness in temperature of treated objects which are flexible and contain fluid contents, and for adjusting the temperature to a predetermined temperature within a short while. <P>SOLUTION: A liquid soup enclosure 21 in a bucket 23 is dipped into a storage tank 22 in which cooled water is stored, cooled water for swirling is spouted by a spout nozzle 24 to fluidize the cooled water in the bucket, and the enclosure 21 is deformed. Accordingly, the enclosure 21 is rubbed, and the fluid soup in the enclosure 21 is swirled and can be agitated in the enclosure 21. By moving the fluid soup around a center of the enclosure 21 to the vicinity of a surface of the enclosure 21, thermal exchange between the fluid soup and cooled water widely different in temperatures can be performed. By increasing the difference in temperatures between the cooled water and the vicinity of the surface of the enclosure 21, the thermal exchange can be performed efficiently.
