PROBLEM TO BE SOLVED: To provide a method for smoothly acylating a polysaccharide substance without converting the polysaccharide substance into a low-molecular substance. SOLUTION: This method for acylating the polysaccharide substance comprises reacting the polysaccharide substance with a carboxylic acid anhydride in a solution composed of an alkaline earth metal halide, a carboxylic acid and the carboxylic acid anhydride.
