摘要 PURPOSE: Provided is a production method of bamboo salt-fermented soybean paste containing green tea, thereby improving its taste preference and smell as well as its quality. CONSTITUTION: A production method of bamboo salt-fermented soybean paste comprises the steps of: mixing soybeans, bamboo salt and water in a weight ratio of 3.5:1.3:1; adding charcoal, red hot pepper and jujube to the mixture, and followed by sealing and maturation for 40-60 days; and taking the matured solids, and followed by addition of 2 wt.% of green tea and maturation for 30-90 days.
