PURPOSE: Provided is a method for burn-out processing a polyester fiber which uses an organic acid in decomposing a cellulose fiber instead of the inorganic acid to create excellent burn-out property, and gives excellent color development to polyester. CONSTITUTION: A burn-out and colored burn-out agent for processing polyester and cellulose mixed fabric is formed with one or more organic acids selected from the group consisting of oxalic acid, tartaric acid, malic acid, citric acid, glycolic acid and gluconic acid. The burn-out agent contains 1-20% of an inorganic acid selected from the group consisting of sulfuric acid, phosphoric acid, sodium hydrogen sulfate, aluminum sulfate and ferric sulfate, based on the weight of the organic acid.
