The procedure consists of cutting thin slices of a feed material from a block maintained at a below zero temperature, placing them at a constant rate on a conveyor (1) moving at a speed of 30 - 50 metres per minute. At the end of the conveyor the slices fall onto a moving tray (2), the movement of which is controlled by a manipulator (4) and synchronized with the conveyor to distribute the slices in a predetermined arrangement. Before it receives the slices the tray is covered with a layer of a packaging material preferably pre-coated with a substance that promotes separation, preservation and/or seasoning, and after the slices have been arranged they are covered with a second layer of the same material to create a product that is ready to eat once the packaging layers have been removed.
