<P>PROBLEM TO BE SOLVED: To obtain a discoloration preventing agent derived from glucides, slightly affecting a color and a flavor of a food and having sufficient effects, and to provide a method for preventing discoloration. <P>SOLUTION: The discoloration preventing agent is obtained by containing 1,5-D-anhydrofructose derived from starch in the browning of foods such as fruits, vegetables, crustaceans and processed products thereof or in a discoloration preventing agent.
