<P>PROBLEM TO BE SOLVED: To obtain a grain flour-containing dough composition excellent in mechanical resistance and freeze storage without requiring an emulsifying agent and other specific modifier and developing preferable texture and physical properties necessary for final products. <P>SOLUTION: The purpose is attained without using the emulsifying agent by separating a part called as an oil body containing an oil seed from an oil seed, and as necessary, applying odor-eliminating heat treatment thereto and adding the oil body to the grain flour-containing dough as a component for the composition. <P>COPYRIGHT: (C)2003,JPO |
