PROBLEM TO BE SOLVED: To prevent the solid-liquid separation of a highly viscous food packed in a container in a hot state and surely obtain a highly viscous food having a desired viscosity by cooling the food while suppressing the temperature difference (uneven cooling) of the food between the center and the peripheral part of the container as far as possible. SOLUTION: The bottle-cooling apparatus to be used in the cooling method is provided with a conveyor, a cooling water supplying pipe placed above the conveyor or thereabout and supplying cooling water and a water-spray nozzle connected to the cooling water supply pipe and spraying cooling water to the container. The highly viscous food packed in a container is erected on the conveyor, the conveyor is intermittently moved at a speed of 6-24 cm/sec and the container is brought into contact with the cooling water to effect the cooling of the highly viscous food packed in the container.
