PROBLEM TO BE SOLVED: To provide an electrolytic water producing apparatus in which electrolytic concentration after the supply of an electrolyte is not thickened, thereby usability is improved. SOLUTION: The electrolytic water producing apparatus includes an electrolytic concentration detecting means 7 to detect electrolyte concentration of water to be electrolyzed. An electrolytic concentration detecting means 7 detects the electrolytic concentration of the water to be electrolyzed before supplying the electrolyte to the water to be electrolyzed. When the electrolytic concentration remains within the range of predetermined concentration, predetermined pH is reliably obtained after processing in the electrolytic water producing apparatus to electrolyze the water to be electrolyzed without supplying the electrolyte, so that stable performance is obtained and the usability is improved.
