Process for the production of N-protected azetidine-2-carboxylic acids (AzeOHs)

N-protected azetidine-2-carboylic acid can be produced by the addition of a base to an aqueous solvent comprising an organic acid addition salt of an azetidine-2-carboxylic acid and then the addition of protecting agent to the resulting mixture. Preferably the organic acid is tartaric acid and the protecting agent provides a tert-butyloxycarbonyl group.
