PURPOSE: A method for preparing a kelp jelly is provided, to enable the kelp of high nutritive value to be processed and used conveniently by making it into the form of jelly. CONSTITUTION: The method comprises the steps of adding water to a mixture of agar and refined sugar, heating and stirring the mixture and adding millet jelly to the mixture to prepare Brix 75% jelly mixture solution; dipping kelp to 10-70 wt% acetic acid solution, adding an edible material to the kelp, heating the solution 95-105 deg.C to boil it down, drying and pulverizing it, adding about 500 cc of water to about 5 kg of the pulverized kelp and heating it for about 10 min to obtain the kelp extract, mixing the kelp extract with the jelly mixture solution and the plum powder, and cooling the mixture to prepare a jelly-phase mixture; and molding the jelly-phase mixture, cutting and drying the molded one. Preferably the ratio of the kelp extract to agar is 5-10 : 100 by weight, and the ratio of the plum powder to agar is 3-6 : 100 by weight. |
