Isolated polynucleotide (I), encoding a phytase, comprising: (a) a fully defined 540 amino acid sequence given in the specification; (b) a sequence that hybridizes to (a); (c) a sequence homologous with (a); or (d) a fragment of (a)-(c). Independent claims are also included for the following: (1) isolated polynucleotide (Ia) that includes (I); (2) phytase (II) encoded by (I) or (Ia); (3) chimeric gene (CG) comprising (I) or (Ia), linked to a promoter and a terminator; (4) expression and transformation vector containing CG; (5) host organism transformed with CG; (6) method for producing an extract with phytase activity or purified (II); (7) enzyme composition containing (II); (8) food composition containing the cells of (5), an organism containing (I) or (Ia), or (II); (9) methods for producing compositions of (8); and (10) the strain Penicillium sp.
