PURPOSE: Provided is a composition of frying oil inhibited in thermal oxidation. The composition inhibits the increase of free fatty acid, prevents the lowering of smoke point. CONSTITUTION: A composition of frying oil is characterized by comprising 0.01-10.0 wt.% of oleoresin capsicum including capsaicin, 0.01-30ppm of silicon resin and 0.01-10.0 wt.% of butter flavor.
