PROBLEM TO BE SOLVED: To provide a device for beautifully polishing the surfaces of coffee beans and to prevent the failure of the coffee beans. SOLUTION: The coffee bean polishing device is a device obtained by positioning a polishing roll 3 provided with a plurality of projected ribs 6 for polishing on its outer periphery into a polishing cylinder 1 formed to a regular cylinder or polygonal cylindrical shape, in which the front ends of the projected ribs 6 for polishing are formed to the projecting length not arriving at the inside surface of the polishing cylinder 1 to polish the coffee beans existing between the front ends of the projected ribs 6 for polishing and the inside surface of the polishing cylinder 1; portions among a plurality of the projected ribs 6 for polishing are formed as the resin projected ribs 6a for polishing made of synthetic resins; the other portions are formed as the stone projected ribs 6b for polishing made of stone materials and the resin projected ribs 6a for polishing; and the stone projected ribs 6b for polishing are arranged to intersect with each other.
