PROBLEM TO BE SOLVED: To provide a method making it possible that a conventional enzyme preparation which is widely used as a functional food material of a high nutritive value and a medicine for promoting metabolic function and increasing appetite is made to be used in such a form as easily drinkable, excellent from a nutritive viewpoint, and excellent in stability during its storage. SOLUTION: In this method, an enzyme suspension is subjected to high- pressure homogenizing treatment, so that the suspension is stably dispersed. The method gives the enzyme preparation which is excellent in flavor, easily drinkable, and excellent in dispersion stability during the storage is provided, while keeping the nutritive value, efficacy as the functional food, efficacy of promoting the metabolic function, increasing the appetite, etc., of the conventional enzyme preparation which is used as the functional food material and the medicine as it is. Thus, a stably-dispersed enzyme suspension given by the method is easily drinkable because of having no odor peculiar to the enzyme, when used as the drink, and further is available as an enzyme food which is liquid or gelatinous, good-tasting, and easily ingestible, when used as the food material. |
