摘要 PROBLEM TO BE SOLVED: To provide Natto (fermented soybeans) abundantly containing an isoflavone aglycone derived from soybeans and having excellent absorptivity in living bodies and a method for producing the Natto. SOLUTION: The Natto abundantly containing the isoflavone aglycone is obtained by hydrolyzing an isoflavone glycoside derived from the soybeans which are raw materials. The method for producing the Natto is provided. The hydrolysis for the Natto is carried out by adding a diglycosidase to a production process for the Natto and the method for producing the Natto is provided.
