POWDERED FAT CONTAINING NEW HIGHLY-BRANCHED CYCLIC DEXTRIN, METHOD FOR PRODUCING THE SAME, AND FOOD AND DRINK GIVEN BY UTILIZING THE SAME

PROBLEM TO BE SOLVED: To provide a powdered fat so good in fluidity as to be fluent and having good dispersibility into water, regardless of the melting point of the used fat and the kind thereof, when the powdered fat is given by a spray-drying method. SOLUTION: This powdered fat comprises a composition to which a specified amount of a highly-branched cyclic dextrin is added. The powdered fat thus produced has the good fluidity, is easily handled, and has the excellent dispersibility into the water in a wide temperature range of low temperatures to high temperatures.
