摘要 PROBLEM TO BE SOLVED: To provide an agar composition having excellent water holding properties and a sufficient gelling power without texture of a pasty texture. SOLUTION: This agar composition is characterized by comprising an agar having 10,000-200,000 average molecular weight and an adhesive paste composed of at least one or more kinds of locust bean gum, tara gum, konjak mannan and cassia gum. The ratio of the agar to the adhesive paste is 1:(0.01-9.5) and xanthan gum is further contained. The agar composition has 10-1,000 Pa dynamic storage viscoelasticity G' and 0.01-1 loss tangent at 1% concentration and 15 deg.C.
