<p>PROBLEM TO BE SOLVED: To provide a pickled turnip having good palatability even by leaving the skin on the turnip. SOLUTION: A plurality of incisions 18 having nearly circular or nearly arched form are applied to the skin 13 of a bulb 11 of a turnip K1 in circumferential direction by plane view on at least upper 1/5 of the bulb 11 and the bulb is sliced to thin slices while leaving the skin 13 and pickled in a proper seasoning. Since the fiber existing under the skin is cut with the incision 18, there remains little chewing residue in the mouth and the impregnation of seasoning is promoted by the incision 18 to obtain a pickled turnip having good palatability.</p> |
