L-Glutamic acid is obtained by culturing a suitable micro-organism in an aqueous nutrient medium containing a carbon source, a nitrogen source and inorganic salts, under aerobic conditions at pH 5-9 and 20-40 DEG C., in the presence of an ester of a monohydric aliphatic alcohol with a saturated aliphatic carboxylic acid, or mixture of such esters. Suitable micro-organisms are Micrococcus glutamicus, or species of Bacillus, Corynebacterium, Escherichia, Pseudomonas, Aspergillus and Saccharomyces. Specified esters are of citric, succinic, malic, adipic, gluconic, and acetylmalic acid; dibutyl malonate and tributyl acetylcitrate are also used in examples.
