PURPOSE:To prepare noodles having varying thickness or diameter along the direction of length, by pressing a noodle web with an eccentric roll and slitting the obtained web having wavy thickness varying along the length. CONSTITUTION:Before slitting a noodle web into narrow strips, a noodle web is pressed with an eccentric roll 3 rotatably supported at both ends and arranged in a direction crossing the transfer direction of the noodle web. Noodles having similar appearance to hand-made noodles and having wavily varying thickness along the transfer direction of the web can be prepared by this process. |
