PURPOSE: Provided is a manufacturing method of soy sauce using Salicornia herbacea, therefore soy sauce has unique aroma and flavor, contains various nutriments included in Salicornia herbacea, and has prevention effects on adult diseases including obesity, diabetes, hypertension, etc. CONSTITUTION: The manufacturing method comprises the steps of collecting Salicornia herbacea, washing it with sea water 3-4 times; washing it with fresh water twice; juicing it in a compressor; concentrating the juice in a concentrator at 100-140 deg.C for 3 hours to 50%; maturing the concentrate; and heating it at 100 deg.C for 1 hour then cooling it. |
