PROBLEM TO BE SOLVED: To provide a new chymotrypsin-like protease capable of being massively produced, to provide a method for producing the same, and a method for producing a proteolytic product-containing material, comprising allowing the new chymotrypsin-like protease to act. SOLUTION: This chymotrypsin-like protease having the following physicochemical properties. The method for producing the protease, comprising culturing a strain belonging to the genus Trichoderma. The method for producing the proteolytic product-containing material, comprising allowing the new chymotrypsin-like protease to act on proteins or a protein- containing material. (1) Action substrate specificity: the chymotrypsin-like protease has a chymotrypsin-like protease activity. The chymotrypsin-like protease acts on human angiotensin I and a synthetic substrate, Suc-Ala-Ala-Pro-Phe-pNA, but does not act on N-t-Boc-Leu- Gly-Arg-pNA and N-t-Boc-O-Bz-Ser-Gly-Arg-pNA. (2) The optimal pH: about pH 8. (3) The optimal temperature: about 40 deg.C. (4) pH stability: stable at least in the range of pH 5.0 to 11.5. (5) Temperature stability: stable at least up to 40 deg.C. (6) Inhibitor: the chymotrypsin-like protease is inhibited with DFP, PMS and chymostatin. (7) Molecular weight: 31,000 (SDS- PAGE). (8) Isoelectric point: about 8.5. |
