Apparatus for production of brandy comprises a distillation vessel (1) in which the mash is heated and which is fitted with a condensation hood (2). This is connected to a precooler (4) which feeds condensate to a second cooler (5) where it is cooled below 20 deg C. This is fitted with a heat exchanger (6) for cooling water from the precooler and a mains connection (7) supplies fresh water to the second cooler. After flowing through this, the water is recycled to the precooler.
