PROBLEM TO BE SOLVED: To provide a method of treating oils and fats of a high concentration by a solid culture system of microorganisms, the culture system of the stabilized microorganisms and the cultured matter thereof. SOLUTION: The oil and fat decomposition method of immobilizing the plural microorganisms capable of aerobically decomposing the oils and fats at a relatively high temperature, more adequately the several species of the microorganisms belonging to Rhodococcaceae Streptomytacea and/or Staphylococcacea to a solid phase carrier, bringing this carrier into contact with the oils and fats and effecting intensive culture is provided.
