PROBLEM TO BE SOLVED: To provide an oil and fat composition capable of imparting bread with persistent sweet flavor, and provide a method for producing bread by using the composition. SOLUTION: The emulsified oil and fat composition is produced by decomposing a mixture of 100 wt.% oil and fat, 3-10 wt.% non-fat milk solid component and 5-30 wt.% water with a fatty acid decomposing enzyme derived from the genus Aspergillus and/or Rhizopus at an oil and fat ratio of 1-5% and heat- treating the product at 80-95 deg.C for 15-120 min. Bread is produced by using the oil and fat composition. |
