PROBLEM TO BE SOLVED: To provide an improver of unloosening of cooked rice, capable of improving mechanical suitability at the time of production without changing the properties of the cooked rice such as flavor, texture and gloss, and further to provide a method for producing the cooked rice by using the improver of the unloosening. SOLUTION: A processed starch is included in a boiling water at the time of the cooking of the rice. |
