发明名称 PRODUCTION OF RED PEPPER PASTE USING STRAWBERRY
摘要 PURPOSE: A process of preparing the titled red pepper paste(Gochujang, Korean name) is provided by fermenting fermented bean paste powder, red pepper powder, salt, glutinous rice or the like and then mixing a strawberry paste. Whereby, the red pepper paste is less hot to the palate than conventional ones and does not have unpleasant smell of traditional fermented bean paste(Doenjang, Korean name). CONSTITUTION: Steamed cereals are inoculated with Aspergillus oryzae and cultured. The mixed cereals are mixed with red pepper powder, purified salt and purified water and fermented for a specified period to produce a filtrate, which is mixed with straw berry jam and heated. For an example, 10Kg steamed glutinous barley, 2Kg fermented bean paste powder and 500g malt are saccharified and filtered. The filtrate is mixed with 3Kg red pepper powder, 3Kg purified salt and 3Kg purified water and fermented for 25 days. And then the ferment is mixed with 8Kg straw berry jam.
