PROBLEM TO BE SOLVED: To provide a yield-improving agent used in processing seafood or meat, and to provide a method of its application. SOLUTION: This yield-improving agent used in processing the seafood or the meat comprises an aqueous solution containing ethanol in an amount of 1-30% (v/v) and an organic acid salt in an amount of 5-25% (v/w). The seafood or meat is brought into contact with the agent. The seafood or meat thus treated is decreased in weight loss on heating, and further has an excellent feeling when eaten.
