PROBLEM TO BE SOLVED: To provide a method for producing cold Chinese noodles enabling eaters to enjoy the cold noodles with miso, soy sauce or salt taste similar to hot Chinese noodles' taste, and persons working in hot places to eat with refreshing cool feeling, and capable of being delivered since the oil fraction thereof does not coagulate even in a winter season. SOLUTION: This method for producing cold Chinese noodles comprises such processes as to prepare ingredients, soup, thick seasoning either of miso, soy sauce or salt taste, garlic oil, and cold noodles; wherein animal oil fraction coagulated through cooling a crude soup made by cooking the material is removed in the process of preparing the soup, and the above treatment of removing such oil fraction is done at least three times, and after the oil fraction is removed, the crude soup is filtered to become clear, and finally the cold noodles are put into a case with ice blocks followed by pouring a soup and thick seasoning-mixed one and garlic oil thereonto and then dishing up the ingredients. |
