PROBLEM TO BE SOLVED: To obtain a powdery acidulant delaying the elution of the acidity ingredient in the mouth, and sustainedly presenting strong sourness even if stayed long in the mouth, and to provide a method for producing the powdery acidulant. SOLUTION: This powdery acidulant is obtained by a fluidized bed layering granulation method using a spray drying-type fluidized bed granulating apparatus through which spherical granules are produced continuously and directly from a liquid raw material; wherein the bulk density of the powdery acidulant is designed to be 0.40 g/cm3-0.95 g/cm3. The other objective method for producing the powdery acidulant comprises spraying an acidulant composition into an acidulant nuclear particle bed fluidized by heated air, and keeping the temperature of the fluidized bed at 80 deg.C-140 deg.C to produce the powdery acidulant having a bulk density of 0.40 g/cm3-0.95 g/cm3 and hardness of 0.5 gf/mm2-1.0 gf/mm2. |
