The semi-aerobic ageing accelerator for wines has a container (1) with a thermostating chamber controlled by a heat exchanger (1'), a valve (10), a pressure regulator filter (2), a pump (7), a feed chamber (3) with a filter (4) and a wine feed three-position valve (5). Volume, oxygen and temperature senors (6,9,8) are also fitted. A manual controller (11) and an automatic controller with an analogue-digital interface (12) connected to a computer also make up the system.
