PURPOSE: Provided is a method for preparing a Japanese apricot tea to reduce the sour taste and make the unique taste and aroma ooze out by differentiating the preparing method and the maturating process in a low temperature with existing ways. CONSTITUTION: A method for preparing a Japanese apricot tea comprises the steps: (i) washing Japanese apricots, removing water, combining with white sugar and oligosaccharide, putting into a storing container, maturating in a low temperature storehouse of -1 to -2deg.C for 3-5 months; (ii) taking the Japanese apricots, and maturating again the Japanese apricots liquid in the same storehouse for 3-12 months; and (iii) filtering the matured Japanese apricot extract.
