PROBLEM TO BE SOLVED: To provide a process for the easy production of an N-acyl acidic amino acid compound on an industrial scale at a low cost. SOLUTION: A solution containing an N-acyl acidic amino acid compound is mixed with an acid and the formed precipitate is washed with an electrolyte solution. The electrolyte is preferably at least one kind of compound selected from alkali metal chloride, alkali metal sulfate, alkaline earth metal chloride and alkaline earth metal sulfate. The electrolyte concentration of the electrolyte solution is preferably 0.1-10 wt.%.
