The invention concerns lactic acid bacteria which have been provided with a respiratory metabolism, in particular by genetic modifications, such that the expression of at least one gene, either heterologous or homologous, coding for a protein intervening in said respiratory metabolism, is altered. Said bacteria are useful in particular for producing lactic acid ferments.
