PROBLEM TO BE SOLVED: To obtain highly safe purified yolk lecithin by an economical means without using acetone. SOLUTION: A method for producing the subject purified yolk lecithin comprises a combination of the following two operations (1) and (2): (1) in a condition where lecithin forms a micelle, the micelle is subjected to filtration treatment through an ultrafiltration membrane 1 to recover the lecithin micelle a membrane-impermeable concentrate and (2) in a condition where lecithin forms no micelle, the micelle is subjected to filtration treatment through an ultrafiltration membrane 2 to recover the lecithin as a membrane-permeated liquid; wherein the condition where lecithin forms a micelle lies in hexane, whereas the condition where lecithin forms no micelle lies in a mixed solvent of hexane and an alcohol. The purified yolk lecithin thus obtained has the following advantages: there is no acetone residue because of no use of acetone, and there is no fear of any offensive odor due to acetone condensates at all; furthermore, the purification means is only use of ultrafiltration membranes, therefore both equipment cost and maintenance cost are low. |
