PURPOSE: A powder product for fried chicken comprising corn flour, soy peptide, Guar gum, xanthan gum and oleoresin without garlic is provided to serve a crisp and soft taste of fried chicken. CONSTITUTION: The powder includes 45-50wt% of wheat flour, 38-42wt% of corn starch, 3-4wt% of refined salt, 3-4wt% of monosodium L-glutamate, 0.5wt% of corn flour, 0.1wt% of Guar gum, 0.15wt% of xanthan gum, 0.5wt% of black ground pepper, 1.5wt% of white ground pepper, 0.3wt% of powdered hot pepper, 0.5wt% of cinnamon powder, 0.4wt% of powdered onion, 0.02wt% of marjoram oil, 0.2wt% of whey powder, 0.5wt% of yolk powder, 1.5wt% of soy peptide, 0.2wt% of soy bean oil, 0.01wt% of paprika oleoresin and 0.05-0.06wt% of Capsicum oleoresin. |
