PROBLEM TO BE SOLVED: To produce a surfactant that is excellent in safety as well as excellent in the properties inherently possessed by a surfactant such as foaming properties, detergency or the like by using a compound of a structure obtained by adding a 1,2-epoxyalkane to a nitrogen atom of a hydroxamide in which a tertiary amino group is made ampholytic. SOLUTION: A compound of formula I is used. In the formula, R1 represents a group derived from a fatty acid; and X represents R3COO or R3SO3 (wherein R3 is a group derived from a monohalogenated sulfonate). Usually, the compound is produced by allowing a monohalogenated carboxylate or a monohalogenated sulfonate to react with a tertiary amino compound produced by addition reaction of a 1,2-epoxyalkane to a hydroxamide prepared by reacting a fatty acid with a hydroxy amine to make a tertiary amino group ampholytic. As a fatty acid, a 8-20C fatty acid, particularly one originating from a vegetable source, is preferable. As a hydroxy amine, a compound of formula II is preferable, and more preferable is one of formula II wherein n=2 to 3; and m=2 to 3.
