PROBLEM TO BE SOLVED: To provide a food preservative which has an effect for inhibiting the proliferation of bacteria, yeast and fungi and scarcely affects the flavors of foods. SOLUTION: This food preservative contains at least two kinds of fatty acid monoglycerol esters selected from fatty acid monoglycerol esters obtained by 8-12C fatty acids and glycerol,ε-polylysine or its salt, and glycine as active ingredients.
