PROBLEM TO BE SOLVED: To obtain a new gene which has a specific base sequence, codes for a precursor of aminopeptidase which has effects of removing and/or diminishing peptide bitter components, and is useful for producing enzymes which are important in the food industry as seasoning liquids. SOLUTION: This is a new gene which has the base sequence shown by the formula, codes for a precursor of aminopeptidase which has an effect of removing and/or diminishing peptide bitter components, and is useful for producing enzymes which are important in the food industry as seasoning liquids which contain peptides and amino acids as main components. The gene is obtained by culturing Flavobacterium breve strain T-382 by the conventional method, removing cells from the culture, obtaining aminopeptidase from the obtained supernatant, determining its N-terminal amino acid sequence, preparing primers based on the sequence, followed by carrying out PCR using the obtained primers and a genomic DNA extracted from the microorganism as a template. |
